When I first switched to a plant-based diet I was trying to make healthier versions of all my favorite foods, and it seemed like every pancake recipe I tried failed (my amateur spatula skills certainly didn't help!). After having failed many, many times, I finally did what I do best and ditched the recipes! What did I have to lose?
