Ever since I found frozen cauliflower rice at Whole Foods, I have been adding it to my recipes and am loving it! Don't get me wrong; I LOVE my carbs, but I love being able to pack more veggies into my day too. Cauliflower rice makes it so easy!
And speaking of carbs, one of my all-time favorite dishes is pad thai. Traditional pad thai sauce calls for tamarind paste, which can be hard to find, so I created my own version of the sauce that uses wholesome, common ingredients. The taste is similar enough, and it's so easy to make! When I had a craving for pad thai last week I decided to try making a version of it with cauliflower rice instead of noodles and was fully expecting my husband to complain (he loves noodles). To my surprise, he really enjoyed this recipe and encouraged me to share it on my website.
So here we are! I use frozen bags of cauliflower rice to save time, but you can also make your own by "ricing" fresh cauliflower in a food processor.
Simple ingredients, lots of flavor and quick to make, this recipe is now a new favorite of ours. I hope you enjoy it, too!
